Easter!

So it's a few weeks after Easter and I'm just now posting my Easter cupcake. Ah well, it's really cute it'll make up for my procrastination. This is not an original idea, I saw it somewhere and had to copy it. It was a great project for Z and I to do together.

Here are most of the ingredients for the coconut cupcake.

Yes, I forgot to take a picture with my camera... an iPhone picture is going to have to do this time. I used colored twizzlers for the basket handle, jelly beans for the eggs and a bunny peep for the, well, bunny.

Coconut Cupcake (pretty sure I used this recipe...http://simplyrecipes.com/recipes/coconut_cupcakes_with_coconut_cream_cheese_frosting/)

3/4 cup of unsalted butter, room temperature
1 1/4 cup of sugar
3 eggs, room temperature
1 cup of canned coconut milk
1 teaspoon of vanilla extract
2 1/4 cups of cake flour
1 teaspoon of salt
1 teaspoon of baking powder
1/2 cup of sweetend coconut

1 Preheat the oven to 350 F. Cream the butter until light and fluffy. Add sugar and cream till light and fluffy again, scraping down the sides halfway through to ensure even mixing.

2 Add the eggs, one at a time, beating for 30 seconds each to ensure mixing. Be sure to scrape down the sides after each egg to ensure even mixing.

3 Combine the flour, salt, and baking powder in one bowl. In another add 1 cup of a well shaken can of coconut milk and a teaspoon of vanilla. Add 1/3 of the dry ingredients and mix, then add 1/2 of the wet ingredients. Continue alternating with the wet and dry mixtures, ending with the dry. Stop mixing once just as the ingredients become incorporated; do not overbeat.

4 Fold in the coconut. Scoop into cupcake papers about one half to three-quarters of the way full. Bake for 18-22 minutes, rotating the pan after the first 15 to ensure even baking. Be sure to check with a toothpick to see if the cupcakes are done. If the toothpick comes out of the cupcake clean, then they're ready. Allow the cupcakes to cool for a minute or two in the pan, then transfer to a wire rack to cool completely.

Happy Turkey Day!

Okay, it's a few days past Thanksgiving day but...you know me! I hope everyone's day was great and that it was filled with lots of delicious food and especially some good sweet stuff ;)

I didn't do too much cooking this weekend, a bit burned out from my mini pies. For Thanksgiving day I did manage to make roasted vegetables and key lime tarts and for Turkey Day part 2, I made yeast rolls! Yeast rolls how I love thee. They are so fluffy and light and just too much deliciousness...they actually remind me of elementary school. Good times.

So, since I didn't really make anything too great to share I thought I'd post a couple pics of a cupcake I made a while ago. And when I say a couple of pics, I mean it. There are only 2. I really need to tie my camera around my neck to force myself to take pictures, come to think of it I don't think I took any on Thanksgiving! Uh-oh...

Snickerdoodle Cupcake

I made these for my sister Susan's birthday since she is a lover of the snickerdoodle cookie. The cake was light and cinnamon-y.

Now, I know this picture is small but I'm pretty sure it was taken with a cell phone...I know, I know. I made a boiled icing with a bit of cinnamon sugar on top, very yum!

Some food...

Hello all!

Well, it's been long enough since my last entry so here I am again. There are lots of new and exciting things going on these days and we seem to be busy all the time. Ezekiel will be 6 months on Wednesday and we can hardly believe it! Time has gone by so fast and I stop at least once a day to remind myself to really make the most of his baby time, next thing I know he'll be going to kindergarten.

On to the cupcake...
A few weeks ago my sister, CJ took me to downtown San Diego to visit a bakery called "Heavenly Cupcake" the store itself is pretty modern and the cupcakes look great, albeit a little too cardboard-y. Anyway we decided to try: chocolate, dark chocolate, vanilla, peanut butter, red velvet and their signature flavor orange chip.

The red velvet was soooooo good, the best of the 6. All the rest were....eh, mediocre. The vanilla actually made me gag, it tasted like a stick of butter!

Enough of non-sweet cupcakes (if that's even possible), here is a really really good cuppy-cake....german chocolate! I've discovered that german chocolate lovers are beyond loyal to this type of cake, they will always choose it before any other flavor!

This is good...

Why hello there friends!

Ezekiel and I are feeling much better now and are looking forward to Saul coming back from WLC. He made the comendant's list and is an honor grad, yay for him! That gives him 20 more points towards his next promotion. We are hoping to come to a consensus if this life is still what we want, we may or may not be leaving the Army soon. We'll just be 3 vagabonds (and a dog), going from place to place until we find somewhere that feels right.

I also started giving Zeke some "solid" food on Monday, we started with avocado and he seems to mildly like it. I think he just enjoys sitting in his high chair at the table like a big boy. Saul can't wait to feed him, I already know it's gonna be a big mess! This nursing journey has been so interesting, we are no where ready to wean but starting food is just the next step in Ezekiel being a big boy.

On to the cupcake...I saw a recipe for a cheesecake cupcake but it looked so boring. It was just a yellow cake with cream cheese on top, not very appetizing. I made it delicious with a strawberry fruit topping and crumb finisher! Yum Yum...

Cupcakes of old...Part 1

Life with an almost 5 month old is unpredictable to say the least. I haven't really had a chance to come up with any new delicious cupcakes but I have a bunch that I've made in the past. So, I will post my "old" cupcakes until I get back in to the swing of life. Hope you all enjoy my blog and the cupcakes!
